Recipe Rundown
Ingredients
You’ll need basic ingredients such as pork belly, soy sauce, calamansi juice (can also use lime or lemon), garlic, sugar, black pepper, and onion.
instructions
Marinate the pork briefly in the soy sauce, calamansi juice, garlic, sugar, and black pepper. Then pan fry until brown, and let simmer with water for about 15 minutes. Add in the onions to soften for an additional 5 minutes, and serve!
Cooking tips
Simmer the pork adequately for tender pork every time. The longer you reduce the sauce, the thicker your pork steak sauce will be. Also feel free to add as much onions as you’d like!
Storage
Leftovers can keep for up to 5 days refrigerated (perfect for meal prep!)
Instructions
In a large bowl, combine together the pork belly, soy sauce, calamansi juice, sugar, ground black pepper, and garlic. Mix well to coat the pork, and let marinate for 10 minutes.

Heat the oil in a pan over medium-high heat. Add in the marinated pork and sear on both sides until browned. Pour in the remaining marinade and water. Bring to a boil, then cover, and lower the heat to medium-low. Let simmer for 15 minutes until tender.

Add in the onions, stir to combine, and let simmer for an additional 5 to minutes to soften. Serve warm.

Ingredients and Substitutions
*The Recipe Card below includes all the full measurements for these ingredients!
Pork belly: The key to a quick pork steak is using thin cuts of boneless pork!
- Substitutes: Feel free to use other cuts of pork such as shoulder, butt, or pork chops (just adjust the cooking time accordingly depending on its thickness). You can also use beef for a classic Bistek!
Soy sauce, calamansi, garlic, sugar, black pepper: This is the standard marinade for any good pork steak which makes it deeply savory and lightly tangy!
- Substitutes: Calamansi can be replaced with equal parts lemon or lime juice.
Onion: I like using red onions due to their sharper flavor profile, but feel free to use yellow or white onions

Cooking Tips
Simmer your pork adequately: Don’t skip the simmering step! Cooking over low heat ensures the pork comes out tender and not overly chewy.
Reduce your sauce to preference: If you like your sauce thick, continue to reduce the liquid on high until thicker in consistency.
Add as much onions as you’d like: Feel free to add as much (or as little) onions to your preference. Once they cook down, they give a slight sweetness to the pork steak which enhances its flavor.
FAQs (Frequently Asked Questions)
How do I store leftovers?
Leftover pork steak can keep for up to 5 days stored in an airtight resealable container in the fridge. To reheat, simply microwave or heat over stovetop until fully warmed through.
How long can I marinate the pork?
For a quick recipe, 15 minutes is adequate (especially since the pork is cut so thin). Otherwise, for deeper flavor, you can marinate it for an hour up to overnight.
What’s the difference between pork steak and bistek?
As the name suggests, pork steak uses pork, while bistek uses beef (Filipino beef steak). Flavor-wise, the marinades/sauces are virtually the same, just with a deeper, heartier flavor if you end up using beef.
