    Ingredients

    • Beef
    • 225 g beef, cut into thin slices (about 1/4-inch thick)

    • 1 tablespoon shaoxing wine (can be omitted or substituted with dry white cooking wine)

    • 1 tablespoon cornstarch

    • 1/8 tsp baking soda

    • Sauce
    • 2 tablespoons water

    • 1 tablespoon soy sauce

    • 1 tablespoon dark soy sauce

    • 1 tablespoon oyster sauce

    • 1 tablespoon shaoxing wine

    • 1 teaspoon granulated sugar

    • 1/4 teaspoon ground black pepper

    • Stir-Fry
    • 2 tablespoons neutral oil

    • 1 medium onion, julienned

    • 3 scallions cut into 4-inch pieces, whites and greens separated

    • 1 teaspoon sesame oil

    Directions

    • In a medium-sized bowl, combine together the beef slices, shaoxing wine, cornstarch, and baking soda. Mix well to coat the beef and let marinate for 15 minutes.
    • In the meantime, prepare the sauce by mixing together the water, soy sauce, dark soy sauce, oyster sauce, shaoxing wine, sugar, and black pepper. Mix well until smooth and set aside for cooking.
    • In a large pan or wok, heat the oil over medium-high heat. Add in the onions and white parts of the scallions, and stir-fry for about one minute until briefly softened. Set aside.
    • In the same pan, add in the marinated beef. Stir-fry for 1 to 2 minutes, or until the beef is seared and browned all over.
    • Add in the stir-fried onions and white parts of the scallions from earlier. Pour in the prepared sauce, green parts of the scallions, and sesame oil. Stir-fry everything together until the sauce has thickened slightly, about 1 to 2 minutes.
    • Transfer the dish to a serving plate and serve warm with rice. Enjoy!
