    Brioche bun: I love using brioche for their pillow-y and soft texture, allowing it to soak up all the juices from the patty and condiments. Feel free to also use pandesal or standard burger buns!

    Hash brown: Feel free to use frozen hash browns for ease. You can either deep fry or air fry the hash browns until crisp, whichever you prefer.

    Longganisa: These are red, savory-sweet Filipino sausages which you can purchase from most Filipino groceries in the frozen section. Be sure to let them thaw prior to using and removing it from the casing.

    American cheese: You may also use any quick-melting cheese of your choice, such as cheddar or mozzarella.

    Large eggs: I love using sunny-side up eggs for this sandwich (with crispy edges!) as the yolk gives the sandwich a juicy, rich finish.

    Hot sauce, mayonnaise: What’s a sandwich without its condiments? I like using either Frank’s Red or Valentina for my hot sauce, and Kewpie mayonnaise.

    Ingredients

    • Neutral oil, for frying

    • 1 frozen hash brown

    • Kosher salt, as needed

    • 2 tablespoons unsalted butter

    • 1 brioche bun, halved

    • 2 large eggs

    • ~0.4 pounds longganisa, removed from casing

    • 3 slices American or Cheddar cheese

    • Condiments
    • Mayonnaise (I like Kewpie)

    • Hot sauce (Frank’s or Valentina)

    Directions

    • Heat a medium pot with about 2 to 3 inches of oil over medium-high. Fry the hash browns until golden brown, then transfer to a wire rack (you may also choose to air-fry this if you prefer). Sprinkle a generous amount of salt on top and let cool.
    • In a separate non-stick pan, heat the butter over medium heat. Toast the brioche buns flat-side down until golden brown, about 2 minutes, then set aside.
    • In the same pan, heat the oil over medium-high heat. Add in the eggs, and fry until the whites are set and the edges are crisp (you may need to gently fold the eggs over to allow it to fit in the sandwich). Set aside.
    • Shape the longganisa into a ball. Then, in the same pan over medium-high heat with any residual oil (or adding about a tablespoon or so as needed), press the longganisa patty firmly with a spatula.
